Basmati rice (or any of your choice)
Frank fritters (4 pieces)
Bell peppers (red 1x, green1x and yellow1x)
Red onions x1
Mixed vegs (carrots, peas/ stringbeans and sweetcorn)
Spices (Curry, thyme, black pepper, Know/maggi, fresh ginger and clove of garlic)
Chicken wings (raw)
spices (peprika, galic salt, onion granules, tomato powder, red pepper power, mix herbs, chilli powder and black pepper)
Lets get cooking.....
Marinade the Chicken with all the spices (add to taste), and the bbq sauce, mix well and refrigerate overnight or an at least hr before cooking. Before you start cooking the rice put in the over at 180 degrees or gas mark 4/5 for 30-45 minutes.
CHOP CHOP CHOP....
Dice the peppers, red onions and brocoli. Slice up the frank fritters too, whatever size you prefare. Chucky or thin (doesn't really matter). Crush the garlic and mince the ginger. Then we are set and ready to go.
firstly add oil to the frying pan on medium heat, add some onions, the garlic, then the ginger and stir for about 1 minute. After a minute add the frank fritters and stir for 3 minutes, then the mixed veg for another 3 minutes. Add a pich of salt and pepper to taste, you can also add maggi, but remember, you don't want to overshadow the taste of the vegs. So I'd go easy on the seasonings.
Add the peppers in after 2 minutes of stiring, and stir for an extra 5-8 minutes. I tend to like my peppers well cooked by not too soft. Keep in mind that these vegs will still be added to the rice and steamed.
It's rice time.....
This part is gonna seem a little complex but its actually very easy and straight forward.
Wash the rice 2 to 3 times to make sure all the starch is cleaned out.
Add 3 table spoons of oil to the pot on medium heat, add the seasonings (not too much as you will need to add more later while stiring untill you get your prefared taste), then taking a little sections after the other add the rice to the sizzling seasoned oil and stir till all the rice is added (add more seasoning if needed). Then reduce the temprature of the heat and stir slowly for about 5 minutes.
Add a small amount of water every 10 minutes to keep the rice from burning. After 15 minutes add the brocoli and let it steam with the rice for about 10 miutes before adding the rest of the vegs (only add half), allow to steam for 5 more minutes and stir again for about a minute. Allow to steam for another 5 minutes and serve.
Serve with the wings and the other half of the stirfry vegs.
