Summer is almost over and the weather is getting colder. It's time to bring the hot breakfast back. As school will be beginning soon for students, this quick and easy nutritious meal will come in handy.
Pour the apricots in a pot of boiling water and boil till the apricot is very tender, almost forming a puree. Add a drop of vanilla essence and 2/3 of porridge oat and bring to a boil. Add the milk, what ever amount you want (I use half a cup of milk). Cook for a minute, add honey to taste and serve. Sprinkle some pumpkin seeds on top and you are good to go.
For a quicker way to make the porridge, pour the apricots, milk, vanilla essence and oats in a small bowl and mix together. Put the bowl in the microwave for a minute, then bring out and stir before putting it back in the microwave for two more minutes. For an on the go breakfast, just put all the ingredients in a jar, shake and leave in the fridge the night before. In the mourning put the jar in the microwave to heat up and you have your breakfast on the go.
