Ingredients Spring onions chopped Pine nutes Frankfurters sliced Rockets A cup of basmati rice Fish Spices Teaspoon of salt white pepper black pepper Maggi/ knorr cube (optional) Chilli pepper flacks (optional) Olive oil/sesame seed oil Mixed herbs Preparation
The night before, marinade the fish in a casserole dish, with spring onions, the spices and a tablespoon of dark soy sauce. Just before preparing the rice put the fish in the oven for 20mins at 200 degrees. Pour a cup of basmati rice into boiling water and allow to simmer for 5 mins, then drain the water and refill with half a cup of hot water. Add salt and allow to steam cook for 10 - 15 mins. While the rice is cooking pour a teaspoon of olive or sesame seed oil into a frying pan or wok and pour in the sliced frankfurters, stir-fry for about 3 mins and add the pine nuts. Stir-fry for another 2minutes. Once the nuts are golden brown add the spring onions and stir for a minute while adding the spices. Be careful not to over do the spices, a pinch of each is fine, then add the rice and stir well for another 5minutes to make sure everything is thoroughly cooked. Served the rice by putting some in a cup, press down and turning over unto a plate to get the shape in the images above. There you have it. My lunch for today.
