Pancake day came and went and I was bombed cause I didn't get to eat pancakes. So I'm having my own pancake day. Yassss!!!
I don't like the typical english pancakes, I like mine thicker and well.....less chewy. I know I have to add dietary fiber into it somehow, so I'm eating it with strawberries and a banana. Which is one of the most common things to eat pancakes with . What can I say, I'm a simple girl. We can get creative later. For now lets dig in.
Self raising flour | A cup
Milk | 250 ml
sugar | to taste
Baking bower | a pinch (no more)
Egg | 1
Strawberries| 3 (or more)
Bananas | 1 (orr more)
Cinnamon | quarter of a teaspoon
Nutmeg | half a teaspoon
Mix the flour and a pinch of baking power, make sure it's just a pinch. A small amount goes a long way. If you add to much your pancakes will have a salty after taste.
Add the cinnamon and nutmeg to the mix if you want them in. I love adding these two spices because they add a unique taste to the pancakes.
Mix in the sugar
Whisk the egg and Mill together in a larger bowl
Continue to whisk as you slowly pour in the flour mixture.
Turn on you cooker at low heat and place your frying pan on it, and leave to warm up for about 5 mins
Using a deep spoon pour a portion of the batter unto the frying pan and let fry for a few minute them turn over and leave for another few minute.
Once pancake is golden brown remove from frying pan unto a plate.
Repeat the process until all the batter is used up.
Wash the strawberries and cut them, also cut the Banana and sprinkle them on the pancakes and you are ready to eat. If you have a sweet tooth go ahead and add maple syrup. I prefer mine without.
